Eating ... (vegetable heavy breakfasts)

I've been aiming to get more vegetables in which is fairly easy for the most part, because I love them dearly. But breakfast was sort of the final frontier for me - it tends to be grain heavy or just straight up eggs and it was tough to break away from that. Here are some of the ones that have been in regular rotation. And yes, they do all involve eggs. I should probably get more creative at some point.

poached egg + arugula + toast + avocado

friday breakfast
{roasted asparagus + poached egg on ciabatta}

eggs + broccoli
{eggs + broccoli}

saturday breakfast
{leftover roasted mushrooms and asparagus + poached egg - no toast needed}

The scrambled eggs with broccoli gets the most play. We eat steamed broccoli with dinner at least a few nights a week, so I just chop up the leftovers and toss them in while the eggs are cooking. 3 - 4 eggs + 1 cup of chopped broccoli makes a really filling breakfast for two.

There has been lots of food pondering around here lately. I'm working on increasing our produce consumption and better sourcing what meat we do eat. There are several good options on the table right now, and I'll share once I've had a chance to solidify everything. It's feeling really good, so far.

  2. I have to start doing this. My problem is that I end up forgetting what veg I have in the fridge & then it goes bad by the time I realise it's there. I should probably reorganise it & keep a list of what's inside.

    (Also, I'm pretty sure you can't have too many poached eggs.)

    1. Yep - I have a dorky list on the front of the fridge so I know what we have to work with. I write down what leftovers we have as well, so that we can keep track.

      Veggies at breakfast are actually a great way to use up leftovers! I've found that we haven't had anything go to waste since I started.

  4. All of these meals look so yummy! I need to make a bigger effort to eat healthy breakfasts. I normally eat cereal or peanut butter crackers :/

  6. If you haven't already, you should check out "Super Natural Every Day" by Heidi Swanson, the genius behind 101cookbooks.com. The recipes aren't fancy, but they are all about using local, in-season produce and organic ingredients. It's mainly vegetarian, but she offers meat suggestions in many of the recipes.

  13. One of my faves is a spinach omelet, just using frozen spinach. It is so easy and nutritious. And using sun dried tomatoes (soaked in a flavorful oil from the grocery) really gives it amazing flavor too.

  15. I'm kind of going through the same thing too checking my sources and eating more veggies (which has gone on for awhile). I also love putting a little pesto in my scrambled eggs, it may taste good with the broccoli, too.

  17. Oooo, these look so delish! I love incorporating veggies to our breakfasts as well.. our fave is green onions, minced garlic, sautéed spinach, shredded cheese with scrambled eggs.   18. They all look divine! I'm especially excited about the roasted asparagus version. We eat a ton of asparagus during the warmer months. We'll be doing more weekend breakfasts at home over the summer, these are perfect, easy-but-healthy-and-look-super fancy meals. Thanks for sharing them!

  19. I absolutely neglect breakfast. Greek yogurt and a banana is about as good as it gets. You've certainly inspired me to wake up earlier to get a solid meal in. And...you make them look so beautiful! Thank you for sharing! I can't wait to hear about what you've learned!

    1. Ha! I'm naturally a fairly early riser and I don't have to leave for work very early. So I have an advantage. That said, most of these take less than 10 minutes and you can pop them in a container and take them to go.

      The only time I don't make a full on breakfast is when I'm going for a run before work and need to leave the house by 6:45. Those days I just make a smoothie with frozen banana and yogurt and take it with me.

      My main goal is to not rely on a piece of toast for breakfast, which is what I'll default to if I let myself get lazy. I love toast, but it definitely doesn't get me through the day.

    I actually started drinking a glass of vegetable juice during breakfast and it has totally changed my world. No kidding...my energy just zoomed. I also stay away from processed carbs which helps a ton.

  25. This is making me hungry! I have to try the arugula on toast with an egg. I do a soft boiled egg on toast with artichoke hummus, which is so...not healthy haha but sooo good!!!

    1. Yep. These are all under 10 minutes of work, though, so fairly easy to fit in. Also, I go to work late.

      If I don't cook, my only options are straight up carbs or smoothies! Neither of which really works out that well for me.
