ReplyDeleteThe cream of mushroom soup was a sixties thing? I thought it was just my family (I swear it's in at least half the non-dessert recipes deemed "family recipes"), but it all makes sense now--my parents were born in the sixties. Ha!
ReplyDeleteI love a lot of roasted vegetables, but I cannot seem to like asparagus in any form.
I love cooking asparagus in a skillet with a little bit of white wine. So, so good!
ReplyDeleteMost of my family recipes require roasting. It's how we grew up. My mom was a fan of one pot meals but, since we were immigrants, had no idea about things like skillet meals or casseroles. The first taco I ever had was at Naugles (now called Del Taco) and it was in the summer before 6th grade. My first casserole was in my 20s, when I went to dinner at my husband's (then boyfriend's) mother's house. In Argentina, everything is grilled or roasted...at least the recipes my mom cooked! But, yeah, I see a lot more roasting going on these days. My awkward 12 year old self would have loved it. I always our dinners were so weird!

ReplyDeleteHere's my question, I love asperagus and have tried to make it a million times. I roast it, on a pan just like this, in a bit of olive oil. The problem is, it always turns out limp and gross. What temp and how long do you usually cook it for?

@ Karinny - It's a Silpat! I use them for everything, rather than parchment paper.
ReplyDelete@ Melissa - Hmmmmm .... it might just be a taste thing? Roasted asparagus is definitely more tender (and limp) than steamed asparagus. The tips are usually just a little crispy, but the stalk will be pretty soft and sweet. I actually love it this way, and I also love it crisp from the steamer, so I cook it both ways.
@ iheartkiwi - Roasted cauliflower is THE BEST. I can eat an entire head myself.

I cheated the other day and bought a container of pre-cut veggies from the farmers market and then had a roasting party. OK, the party was just me in the kitchen with too many vegetables for one person, but I was so happy. And I love the comment about the 60's, nearly all of my mom's favorite "comfort" foods involve a can of campbell's soup.

ReplyDeleteOh my God, no! Roasting is the best way to prepare vegetables! it makes everything taste amazing. I usually roast my asparagus in the same way but add a bit of shredded parmesan.

ReplyDeleteMy dad sent me a stack of my grandma's old cookbooks. I had a blast flipping through their pages... so many of the gelatin bundt cake looking things with pieces of meat & cheese floating in the jelly mass. Yum???? There must have been a market for it back then. Fortunately though, I think roasting will be a classic :o)
ReplyDeletehmmmm I have mixed feelings about aparagus. The quality seems to be pretty varied over here in Australia (maybe its a climate thing?). Its really common to get great big whopping woody stalked spears here, which no amount of roasting will make digestible!
