Kick it up a notch

Several of you mentioned adding a little heat to my January breakfast. I was feeling the need for some extra protein as well.

poached egg + avocado toast

Poached egg on avocado toast, liberally splashed with Tapatio.

So good, you guys. 

I had a total yuppie crisis while making this - I ran out of our usual Maldon flaked sea salt and had to use regular old table salt. I felt genuinely sad and a little put out and then I felt completely ridiculous.

P.S. Poaching eggs is really easy. I finally got up the courage to try it one weekend and now I feel silly for waiting so long. Please check out Deb's excellent post and get to it.

  2. For some reason I've been incredibly intimidated by paoching eggs too. I'm going to have to tackle that fear this weekend, because that looks delicious! Thanks for the step-by-step link.

  8. Oh man. Adding avocado & hot sauce to the poached egg on toast? Ingenious. (You know you got me hooked on the poached egg on toast, right?) I wonder if they have good avocados at the grocery store right now...

  9. Looks delicious! It's all about fresh eggs. When using eggs from my mom's farm we don't have to worry about adding vinegar to the water and the eggs cook perfectly :) I've found the grocery store eggs tend to fall apart in the water.

  11. My husband LOVES tapatio. It's been a breakfast staple since he was a kid. I'm partial to Crystal's due to my upbringing though. With that said, this recipe looks quite tasty.

  13. Wait...quick question on that poaching tutorial -- do you keep whirl-pooling the water after you've dropped the egg in?

  14. @ Amanda - I don't. But I will sometimes use a slotted spoon and move the egg around a bit, if it seems like it's going all over the place. You usually don't need to, though. Once it starts cooking it should mostly stay in place.

    The most important thing I've noticed is getting the water temp right. I bring it to a boil and then reduce it down so that it isn't boiling but you see bubbles rise up every once in a while. I tried catching the water right before it boiled, but I never get it right, so now I always let it boil and then lower the heat and stir.

  18. oh yes, i now have my roommate trained on sea salt and kosher. to him, the table salt tastes "harsh"

  27. this is making the plain wheat toast I'm eating right now seem so sad!! haha. I LOVE poached eggs. love love love. tried them for the first time a few years ago and it's pretty much all I ever order now when I go out to breakfast (Eggs Benedict, yum!). poaching is a bit tricky to do at home I've found, it doesn't always come out perfectly for me. I'll have to go check out Deb's post...

    now back to my plain jane toast and coffee!
