{poached egg + arugula + toast + avocado}
{yolk!}
{roasted asparagus + poached egg on ciabatta}
{eggs + broccoli}
{leftover roasted mushrooms and asparagus + poached egg - no toast needed}
The scrambled eggs with broccoli gets the most play. We eat steamed broccoli with dinner at least a few nights a week, so I just chop up the leftovers and toss them in while the eggs are cooking. 3 - 4 eggs + 1 cup of chopped broccoli makes a really filling breakfast for two.
There has been lots of food pondering around here lately. I'm working on increasing our produce consumption and better sourcing what meat we do eat. There are several good options on the table right now, and I'll share once I've had a chance to solidify everything. It's feeling really good, so far.
The first combo looks so perfect to me! Yum

I have to start doing this. My problem is that I end up forgetting what veg I have in the fridge & then it goes bad by the time I realise it's there. I should probably reorganise it & keep a list of what's inside.
ReplyDelete(Also, I'm pretty sure you can't have too many poached eggs.)
Yep - I have a dorky list on the front of the fridge so I know what we have to work with. I write down what leftovers we have as well, so that we can keep track.
DeleteVeggies at breakfast are actually a great way to use up leftovers! I've found that we haven't had anything go to waste since I started.
Fresh produce going to waste might be my biggest motivator to keep up the fridge list.
DeleteI can't wait to hear what you are doing. We're having similar discussions around here.
ReplyDeleteThanks, Jules - there will be more discussion soon. I think I'm reaching a point where things have come together enough.
DeleteAll of these meals look so yummy! I need to make a bigger effort to eat healthy breakfasts. I normally eat cereal or peanut butter crackers :/
ReplyDeleteI probably would too, except I can't keep either of those things in the house! I will just eat them all up in a few sittings.
DeleteI need to try eggs + broccoli--your version looks delicious!
ReplyDeleteIf you haven't already, you should check out "Super Natural Every Day" by Heidi Swanson, the genius behind 101cookbooks.com. The recipes aren't fancy, but they are all about using local, in-season produce and organic ingredients. It's mainly vegetarian, but she offers meat suggestions in many of the recipes.
ReplyDeletethese all look DELISH. i'm sitting at my desk, pondering my sad lunch ::sigh:: wish i could scamper home to make eggs on this rainy, dreary day.
ReplyDeletebtw, i'm a pretty new follower but have really been enjoying your blog. i have 2: crafty one (http://littleolivebranch.blogspot.com) and newly established style one with my sis (http://sisterswithasideofstyle.wordpress.com).
Wow these all look so yummy!
ReplyDeleteYeah the egg broccoli dish is such an obvious choice, both go so well with cheese! I need to try that!
ReplyDeleteYum!! I'm trying that first recipe today! Never poached an egg before, figure this is a good time to learn!
ReplyDeleteOk I made it, and it was AWESOME! Thank you for sharing what will be my breakfast for the next month!
DeleteYay! That is one of my very favorites. I'll also sometimes make it in a bowl, leave out the toast and add hot sauce. Breakfast salad!
DeleteAll of you options look really doable, in my book. Thanks for the post. Broccoli is our go to veggie too. I'll just make extra next time and try that.
ReplyDeleteMmmm. I love the last idea.
ReplyDeleteMushrooms + Asparagus looks like an amazing combo. I might add broccoli rate to that too.
Thank you for the inspiration!

One of my faves is a spinach omelet, just using frozen spinach. It is so easy and nutritious. And using sun dried tomatoes (soaked in a flavorful oil from the grocery) really gives it amazing flavor too.
ReplyDeleteDo you know I've never tried frozen spinach? So strange. I think I probably need to give it a go.
DeleteThe roasted asparagus looks so yumm!

I'm kind of going through the same thing too checking my sources and eating more veggies (which has gone on for awhile). I also love putting a little pesto in my scrambled eggs, it may taste good with the broccoli, too.
ReplyDeleteThat sounds genius! If I can get my garden up and running, I'll have fresh pesto all summer.
DeleteYUM!! i really need to get up earlier in the morning so i can make hearty breakfasts like these!! they look delish!! loving the avocado and egg combo, yum!!
ReplyDeletelove K
Oooo, these look so delish! I love incorporating veggies to our breakfasts as well.. our fave is green onions, minced garlic, sautéed spinach, shredded cheese with scrambled eggs. My hubby loves it! I will definitely be copying some of your recipes now! Check out my Fab Friday Beauty Tip if you get some time :)

They all look divine! I'm especially excited about the roasted asparagus version. We eat a ton of asparagus during the warmer months. We'll be doing more weekend breakfasts at home over the summer, these are perfect, easy-but-healthy-and-look-super fancy meals. Thanks for sharing them!
ReplyDeleteI absolutely neglect breakfast. Greek yogurt and a banana is about as good as it gets. You've certainly inspired me to wake up earlier to get a solid meal in. And...you make them look so beautiful! Thank you for sharing! I can't wait to hear about what you've learned!
ReplyDeletemylettchronicals
Greek yogurt was one of my go to breakfasts (and lunches!). On really busy mornings I'll just make a smoothie with frozen banana and take it with me.
DeleteI love the idea of roasted asparagus with eggs... mmm. What a lovely way to get some more veggies in a diet!
ReplyDeleteHi, just wanted to say that I LOVE your blog. I've been following it for quite some time now :). What kind of camera do you use?
ReplyDeleteThanks! I use a Nikon D40 - there are more details about lens and such on my "about" page.
DeleteEverything looks so delicious! I think I need to eat (a lot) more vegetables for breakfast. You inspired me.
ReplyDeletethis looks SO DELICIOUS. how do you wake up early enough to eat breakfast though? thats my problem...
ReplyDeleteHa! I'm naturally a fairly early riser and I don't have to leave for work very early. So I have an advantage. That said, most of these take less than 10 minutes and you can pop them in a container and take them to go.
DeleteThe only time I don't make a full on breakfast is when I'm going for a run before work and need to leave the house by 6:45. Those days I just make a smoothie with frozen banana and yogurt and take it with me.
My main goal is to not rely on a piece of toast for breakfast, which is what I'll default to if I let myself get lazy. I love toast, but it definitely doesn't get me through the day.
So yummy!
ReplyDeleteI actually started drinking a glass of vegetable juice during breakfast and it has totally changed my world. No kidding...my energy just zoomed. I also stay away from processed carbs which helps a ton.
Great post!
XO - Marion
This is making me hungry! I have to try the arugula on toast with an egg. I do a soft boiled egg on toast with artichoke hummus, which is so...not healthy haha but sooo good!!!
ReplyDeleteOh, the broccoli and egg dish would be just perfect for my kiddos. I am always on the look out to sneak in some veggies, but not in a way that involves pureeing. Thanks!
ReplyDeleteVang
Do you cook breakfast on a weekday????
ReplyDeleteI am beyond impressed.
Yep. These are all under 10 minutes of work, though, so fairly easy to fit in. Also, I go to work late.
DeleteIf I don't cook, my only options are straight up carbs or smoothies! Neither of which really works out that well for me.
this looks AMAZING!
ReplyDeleteWow I never would have thought of the scrambled eggs with broccoli which is sad because I love them both. Will try tomorrow morning after my run- these are sure to fill me up! Thanks for the tip!!
ReplyDeleteThey all look delicious. It's always a good thing to get more veggies into the diet!
ReplyDeleteoh please do teach us how o poach like that! xxx would love mine to look like yours
ReplyDeleteI learned using Deb's technique - you can see the post here on Smitten Kitchen. Super easy! It does seem to work best with very fresh eggs.
Deletemnaaaaaaaaaaaaaaaaaaaaaam:)
ReplyDeletei made poached eggs on my blog today and i had to include a link to this post, yours are stunning!
